TOXDTECT: Innovative Packaging for the Detection of Fresh Meat Quality and Prediction of Shelf-Life

The TOXDTECT project aims to develop an innovative packaging solution for meat products with improved sensing capabilities able to determine the quality of fresh beef and predict its remaining shelf-life using an external reader containing an intelligent decision system. The system will consist of an array of passive sensors embedded in the film of the package that will measure the presence and concentration of different Volatile Organic Compounds (VOCs) highly representative of the quality of meat. The external reading device will power the sensors, capturing the data. Finally, this data will be analyzed by intelligent software which will decisively determine the quality of the meat and the remaining shelf life of the product.
Meat is a very “fragile” product and any error in meat processing, packaging, distribution or at the point of sale will potentially affect its quality. Failure to detect a pathogen may have a dreadful effect on consumer’s perception and a negative impact on the industry. These problems are important to the meat industry since the freshness of the product is a quality attribute related to the final selling price.
In TOXDTECT Project, a European consortium integrated by four Industrial Associations of SMEs, ASINCAR, Asociación de Industrias Cárnicas del Principado de Asturias (ES), PAFA, Packaging and Films Association (UK), UECBV, European Livestock and Meat trades Union (BE) and ARC, Asociatia Romana a Carnii (RO), along with an industrial SME, LINCIS, Soluções Integradas para Sistemas de Informação Lda (PT) and Industrias Cárnicas Alonso (ES) acting as end user and three Research Centers, CTIC, Centro Tecnológico de la Industria Cárnica de la Rioja (ES), OFI (AT) and Tecnologías Avanzadas Inspiralia S.L. (ES); seeks to develop a novel solution to tackle the problem.
Benefits expected from ToxDtect Project:
- By providing a reliable method for the determination of beef quality and shelf-life directly from the product we will be able to deal with the emerging health awareness demanded by consumers
- Clear labelling system. Consumers will no longer be confused with ‘best before’ and ‘consume by’ dates since the information they get is provided in real time from the real product they are purchasing.
- Reduction of food poisoning cases caused by defective packaging or incorrect manipulation in the distribution chain.
